Channa / Chickpea Burger Recipe
A delicious, healthy burger option with much less calories than a traditional burger. Try adding different vegetables or seasonings to make your own version and let us know how it turned out!
1 tin channa-drained pimento/onions/chive to season
2 tbsps grated carrots 1 egg white
2 tbsps bread crumbs 1/2 tsp geera
salt and pepper to taste 1 egg (optional)
Crush/mash channa. Add all ingredients and mix well. Make into 4 patties.
Spray frying pan with oil (preferably olive oil spray) and heat. Fry on each side till brown.
Try serving with grated cucumber mixed with plain yogurt on a small bun or with potato wedges. Don’t forget to add a side salad!
Each patty is approximately 100 calories
Eggplant Dip
Ingredients:
2 eggplants (called bhaigan/melongene in Trinidad & Tobago)
2 cloves garlic 1 tbsp olive oil
1 pimento pepper 1/4 tsp lime juice
salt, pepper, chive, chadon beni (culantro) to taste
-Slit eggplants and insert 2 cloves of garlic
-Roast on a stovetop griddle or tawah with a drizzle of oil turning intermittently until soft (about 10 minutes)
-Alternately can be roasted in an oven at 400F (about 45 minutes)
-When done, scoop out insides of eggplant with garlic cloves and place in blender
-Add olive oil, lime juice and seasonings
-Pulse in blender to desired consistency
Enjoy with crackers, toasted flatbread (sada roti) or cut up vegetables
